Apples kale salad with baked pumpkin seeds & cottage cheese

 
Apple Kale salad with baked pumpkin seeds & cottage cheese  (4 servings) Ingredients for cottage cheese & pumpkin seeds
  • 100 gm of cottage cheese
  • ½ cup of pumpkin seeds
  • 2 table spoons of olive oil
  • 2 spoons of maple syrup
  • 1 table spoon orange zest
  • 3 table spoons orange juice
  • pinch of cinnamon powder
  • salt
  • black pepper
  • 1 tea spoon chilly flakes
  • few fresh/dry thyme
Method:
  • Pre-heat oven at 200 degrees Celsius. In a bowl add, olive oil, maple syrup, orange zest, orange juice, cinnamon, salt & black pepper. Mix well and add pumpkin seeds to this dressing. Spread it on an oven tray. Cut the cottage cheese in thin strips. Place these cottage strip on the pumpkin and sprinkle some salt, chilly flakes, black pepper. Put this tray in the oven for 20 minutes. Remove and cool it.
Ingredients for Apple & kale 
  • 1 sliced red apple
  • 2 bunches of kale
  • 1 cup pomegranate
  • 4-5 table spoons shallots
  • 2 table spoons olive oil + 2 extra to sprinkle on the dressing
  • 1 table spoons orange zest
  • 4 table spoons orange juice
  • 1 tea spoon chilly flakes (optional)
  • 2 tea spoons red wine vinegar
  • few leaves of thyme
  • salt
  • black pepper
  • 6-8 pieces of feta cheese
Method:
  • Slice the apples. In a bowl arrange the sliced apples, chopped kale & pomegranate. Sprinkle the red wine vinegar on it. In a pan add 2 table spoons of olive oil, add shallots, orange zest, orange juice, chilly flakes, salt & black pepper. Sauté and remove from the flame. Let it cool. Add the extra 2 spoons of olive in this dressing.
Assembling of the salad
  • In a platter of bowl arrange the kale, apples and pomegranate. Top this with the dressing made of shallots. Arrange baked cottage cheese and pumpkin seeds on it. Garnish it with feta cheese. If you have little dressing left, garnish it on the salad. Enjoy.
