Avocado Rice with Cheesy Mushrooms & Corn

 
Avocado Rice with Cheesy Mushrooms & Corn (4 servings) Ingredients for Avocado rice
  • 2 cups of cooked Basmati or long grained rice/ 300 gm 
  • ¼ cup chopped shallots/ 50 gm 
  • 2 table spoons chopped garlic / 30 gm 
  • 1 table spoon grated ginger /10 gm
  • ½ cup chopped cilantro/20 gm
  • 10-15 Basil leaves/ 10gm
  • 1 Avocado/225 gm
  • 2 table spoons jalapeno /30 gm
  • 2 table spoons butter /20 gm
  • 1 tea spoon lemon zest
  • 3 table spoons lime juice
  • 3-4 table spoon scallion/15 gm
  • salt
  • black pepper
Method:
  • In a blender add the Avocado, jalapenos, cilantro, basil, 1 table spoon chopped garlic, lemon zest, lime juice, salt & black pepper. Whisk well and your Avocado paste is ready.
  • In a pan heat the butter, add chopped shallots and 1 table spoons chopped garlic. Sauté for a minute. Add grated ginger and add the cooked rice and Avocado paste. Toss it well and keep it aside.
Ingredients for cheesy Mushroom and corn
  • 1 cup boiled corn kernels/100 gm
  • 1 cup sliced mushrooms/70 gm
  • ½ cup cubed capsicum/70 gm
  • 2 table spoons paprika/20gm
  • 2 table spoons shallots/15 gm
  • 1 table spoon chopped garlic/15 gm
  • ½ cup grated cheddar cheese/40 gm
  • 2 table spoons flour/15 gm
  • 2 table spoons butter/20 gm
  • 5 table spoons of milk /75 ml
  • salt
  • black pepper
Method:
  • Heat butter in the pan. Add shallots and garlic and sauté for a minute. Add sliced mushroom and sauté till the water evaporates. Add the flour and sauté well. Now add boiled corn, capsicum and paprika. Sauté and add milk to it along with salt and pepper. Add the cheddar cheese and let it melt a bit and your cheesy mushroom corn is ready.
Assembling the dish
  • Pre-heat the oven at 250 degrees Celsius. In a baking dish arrange a layer of Avocado rice, then a layer of cheesy mushroom, another layer of Avocado rice and last layer of cheesy mushroom. Bake it for 10 minutes. Serve hot with some slices of Avocado and lemon wedges to garnish.
