Bagel

 
Bagel (makes 10-12 pieces) Ingredients for the dough
  • 400 gm of self-rising flour/bread flour
  • 1 table spoon maple syrup
  • 1 ½ cup warm water
  • 1 table spoon dry yeast
Method:
  • In a bowl add ¼ cup of warm water, dry yeast and maple syrup. Let it rise for 5 minutes. In a bowl or kitchen aid mixer add the flour, yeast and water and knead the dough for 10 minutes till smooth. Make a ball and place it in a bowl and cover with a cling foil. Keep it at warm place for an hour to rise. After the dough has raised double knead the dough lightly. Divide the dough into 10 equal parts. Make a round shape of each dough. Place it in a tray and cover with a damp cloth for 10 minutes. Now take each ball, make a hole in the center and stretch a bit as shown in the video. 
Ingredients for the Poaching water
  • 7-8 cups of water
  • 2 table spoons maple syrup
  • 2 table spoons baking soda
  • 1 tea spoon salt
Method: 
  • In a pan heat the water, add maple syrup, baking soda and salt. Once the water starts boiling add the Bagel and cook for 1 minute each side in the water. Now remove from the pan and place each Bagel on the oven tray with butter paper lining. 
For the toppings
  • 4-5 table spoons Almond milk
  • 3 table spoons black sesame seed
  • 1 table spoon white sesame seed
  • 1 table spoon poppy seed
  • 1 table spoon flaky salt
  • 1 table spoon dry minced garlic
  • 1 table spoon dry minced onion
Method:
  • Pre-heat the oven at 200 degrees Celsius. Brush each Bagel with almond milk. In a bowl mix all the seeds, dry garlic, onion and flaky salt. Sprinkle the mixed seeds on each Bagel. Bake it for 20 minutes till Bagel turn brown.
