Bajra (Millet) Ki Khichdi

Ingredients & methods of Bajra (Millet) Ki Khichdi

    1 ½ cup bajra (millet)
    4 table spoons basmati rice
    4 table spoons green moong dal
    1 table spoon chopped green chilly
    1 table spoon grated ginger
    1 tea spoon cumin seed
    pinch of hing (asafoetida)
    2 table spoons ghee
    3 table spoons white butter
    salt to taste
    4-5 cups water

    In a bowl add the bajra and add ½ cup water. Let the bajra soak for 2-3 hours. Remove the excess water and put it in a blender. Just grind for 2-4 seconds. Now add 1 cup water and you will see the waste floating on the top. Remove it with a strainer.

    In a pressure cooker add ghee, hing, cumin seeds, green chilies, ginger and sauté for a minute. Add the Bajra, rice and moong dal. Sauté for a minute. Add salt and 2-3 cups of water. Give three whistles, now open the pressure cooker and add 1 cup warm water and give 3 more whistles.

    Open the pressure cooker and see if you more water need to be added. Add warm water. Add white butter and with the help of masher mash the khichdi. Cook for 20 minutes without pressure on a slow flame. Adjust the salt.
    Serve hot with Jaggery and Kadhi.
