Black pepper rice noodles with Harissa tofu & vegetables

 
Black pepper rice noodles with Harissa tofu & vegetables (4 servings) Harissa sauce is originally from Tunisia. It’s a spicy sauce originally with red bell pepper and chilies. But in variation we can also make is green Harissa sauce. Ingredients for black pepper rice noodles · Half a packet of thick rice noodles · 3 table spoons butter · 2 table spoons of chopped garlic · 2 table spoons of freshly grounded black pepper · few Basil leaves · ½ tea spoon of lemon juice. · 2 table spoons shallots + 2 table spoons scallions · 2 table spoons grated ginger · salt · ¼ cup noodle water Method: · Cook the noodles as per instruction on the packet. In a pan add butter. Put the freshly grounded black pepper & roast well. Add chopped garlic & ginger and sauté. Add shallots & scallions, sauté. Add the noodle water n cook for half a minute. Add the cooked noodles & toss well with the lemon juice. Ingredients for tofu & Harissa sauce · 1 packet tofu · 3 table spoons chopped garlic · 2 table spoons olive oil · few basil leaves torn · 1 ½ table spoon of maple syrup · pinch of salt · 2 table spoons of lemon juice Method: Pat the tofu with the tissue to soak the extra water. Cut it into slices. Pre-heat oven at 180 degrees Celsius. In a bowl add all the ingredients & mix well. Apply on the tofu and marinate for 20 minutes. Bake it in the oven for 20 minutes. Harissa sauce · 1 cup Coriander leaves · ½ cup parsley · ¼ cup olives · 3 table spoons jalapenos · 6 cloves of garlic · ½ cup shallots · 4 table spoons olive oil · 2 table spoons paprika · 2-3 table spoons lime juice · 2 table spoons grated ginger · 1 table spoon roasted cumin powder · pinch of salt Method: In a blender mix all the ingredients and make a smooth paste. Your sauce is ready. Ingredients for tossed vegetables · 1 cup sliced red bell pepper · 1 cup sliced yellow bell pepper · 1 sliced onion · 4 baby corn sliced length wise · 1 cup sliced carrot · 1 cup sliced purple cabbage · 2 table spoons chopped garlic · 2 table spoons grated ginger · 2 table spoons olive oil · 3 table spoons of shallots · 2 table spoons paprika · 1 table spoons of chili flakes · 2 table spoons soya sauce Method: · In a pan add olive oil. Sauté garlic and shallots. Add ginger and a pinch of salt. Now add paprika, onion and all other vegetables. Sauté on high flame for 2 minutes. Add soya sauce, salt & chili flakes. Your tossed vegetables are ready. Assembling of the platter · Place the noodles. On the side, the tossed vegetables and tofu. Pour some Harissa sauce on tofu. Garnish with scallions & sesame seeds. Serve hot.
