Blueberry Crème Brulee

 
Blueberry Crème Brulee (makes 6 small ramekin bowls) Ingredients
  • 150 Gm blueberry 
  • 1 ½ cup milk
  • ½ cup fresh cream
  • 3 table spoons custard powder/corn flour
  • 7 table spoons sugar 
  • ¼ cup water + 4 table spoons 
Method:
  • In a pan add blueberries, ¼ cup water and 3 table spoons sugar. Cook till the blueberries are cooked. Pour in the ramekin bowls as shown in the video.
  • In a pan heat milk, fresh cream and 4 table spoons of sugar together. In a separate bowl add the custard powder and 4 table spoons of water. Mix well. Once the milk starts boiling add the custard powder and cook for a minute. Keep stirring. Let the mixture cool and pour on top the blueberries. Refrigerate for 1-2 hours.
Ingredients for Caramelizing and garnishing
  • 3-4 table spoons brown sugar
  • few blueberries to garnish
  • few Basil to garnish
Method:
  • Take out the bowls from refrigerator. Sprinkle brown sugar on it. With a blow torch caramelize the sugar as shown in the video. Garnish it with blueberries and Basil. Serve it chilled.
Note: If you are using corn flour then add 1 tea spoon of vanilla essence.
