Burnt Garlic Rice with Pumpkin Curry (6 servings)
Ingredients & methods of Burnt Garlic Rice with Pumpkin Curry

    Ingredients for pumpkin curry:
    · ½ kg of pumpkin
    · 1 cup chopped mushrooms
    · 1 cup broccoli
    · 1 cup red bell pepper
    · 1 cup yellow bell pepper
    · 5 table spoons of shallots
    · handful of parsley
    · 2 cups coconut milk
    · 3 table spoons vegetable oil
    · 3 table spoons of chopped garlic
    · 2 table spoons grated ginger
    · 2 table spoons of paprika
    · 1 tea spoon lemon zest
    · few Basil leaves
    · 3 dries red chilly
    · salt
    · black pepper
    · 1 1/2 cups vegetable stock

    · Cut the pumpkin into pieces. Pre-heat the oven at 200 degrees Celsius. Take a foil, place pumpkin, 1 spoon of chopped garlic, salt and few parsley leaves. Now bake it for 20-25 minutes. Meanwhile in another baking tray add chopped mushrooms, broccoli, red & yellow bell peppers, 1 table spoon of paprika and bake it for 20 minutes at 180 degrees Celsius.

    · Make a nice puree of the baked pumpkin. In a pan add oil, add dry red chilies, sauté for 20 seconds. Add chopped garlic and shallots with a pinch of salt and sauté. Add 1 table spoon of paprika, grated ginger and sauté. Now add pumpkin puree and sauté for a minute. Add salt, black pepper and the baked vegetables. Sauté. Add vegetable stock and coconut milk with some fresh torn Basil leaves. Once it starts boiling add lemon zest. Your Pumpkin curry is ready.
    Ingredients for burnt garlic rice:
    · 1 cup uncooked Basmati rice
    · 3 table spoons of garlic
    · 4 table spoons of shallots
    · 2 table spoons of grated ginger
    · 2 table spoons of vegetable oil
    · 2 table spoons of scallions
    · salt
    · black pepper
    · Cook the rice as per the instruction on the box. In a pan add oil, sauté chopped garlic & shallots till little brown. Add grated ginger and sauté again. Add the cooked rice, salt and black pepper. Toss well and garnish with scallions.
