Burrito Bowl

 
Burrito Bowl (2-4 persons) For Burrito bowl, you need to make rice, black beans, cherry tomatoes, Corn kernels, capsicum separately and then need to be assembled. Thus, I have mentioned all the ingredients and method separately. In this I am adding two pictures, one with the capsicum and one without. Rice  Ingredients
  • 1 cup brown rice (uncooked)
  • 1 cup coriander
  • 5-6 jalapeno
  • 5 basil leaves (incase u don’t have basil use mint leaves)
  • 1 lemon juice
  • 5 cloves of garlic
  • salt
  • pepper
Method
  • Cook the rice as per the instruction on the box. Mix all the other ingredients and churn it in a mixer. Add this to the rice and keep it aside.
Black beans Ingredients
  • 1 can black beans (or you can soak rajma, boil it and strain)
  • 6 cloves of garlic
  • salt
  • pepper
  • chili flakes
  • 2 spoons olive oil
  • 1 spoon lemon juice
Method
  • In a pan put olive oil, add garlic and sauté for a minute. Add the black beans, salt, pepper, chill flakes and lemon juice. Sauté and keep it aside.
Cherry tomatoes  Ingredients
  • 1 cup cherry tomatoes
  • ¼ cup coriander leaves
  • 1 table spoon olive oil
  • 1 table spoon lemon juice
  • salt and pepper
Method
  • Mix all the ingredients and keep it aside.
Sweet Corn Ingredients
  • 1 American corn boiled and take the corn kernels.
  • 1 table spoon butter
  • salt and pepper
  • 1 spoon lemon juice
Method
  • In a pan heat the butter. Add corn kernels, salt, pepper, lime juice. Sauté and keep it aside.
Capsicum
  • Slice the red and yellow capsicum lengthwise. Brush little olive oil salt and pepper and place it in the oven for 10mins at 200 degrees Celsius.
Few lettuce leaves and sour cream (in case you don’t have sour cream you can use hung curd). Arrange as shown in the picture.
