Cabbage Rolls with Creamy Spinach Cottage Cheese & Baked Mushrooms (serves 6) The creamy effect of homemade paneer (cottage cheese) is what enhances the flavor of these cabbage rolls and on top of it the baked mushrooms.
Ingredients & methods of Cabbage Rolls with Creamy Spinach Cottage Cheese & Baked Mushrooms

    Ingredients for Cabbage filling:
    · 6 leaves of cabbage
    · 200 gm of spinach
    · 100 gm of homemade paneer
    · ½ cup finely chopped carrot
    · ½ cup finely chopped green bell pepper
    · 2 table spoons of chopped garlic
    · 2 table spoons sliced paprika
    · salt & black pepper
    · chili flakes
    · few torn Basil leaves
    · 1 table spoon olive oil

    In a blender put the home-made paneer and make a smoot paste. Boil the spinach, drain the water and make puree. In a pan add hot water and place the cabbage leaves for 2 minutes. In a pan add olive oil, add garlic and sauté for a minute. Add chopped carrot & green bell pepper. Sauté for a minute. Add the sliced paprika and spinach puree. Sauté for a minute. Add salt, black pepper and chili flakes and few torn basil leaves. Let it cool, once it is cool add the creamy paneer (cottage cheese) to it. Mix well. Take the cabbage, fill 2 spoons of filling and fold it.
    Ingredients for tomato sauce:
    · 4 tomatoes
    · 2 tomatoes skinless and chopped
    · 4 cloves of garlic
    · salt
    · black pepper
    · 1 table spoon chilly flakes
    · 2 table spoons of olive oil
    · 3-4 Basil leaves
    In a blender add tomato, garlic, olive oil and 2 basil leaves. Make a nice puree. In a pan add this puree, chopped skinless tomato, salt, pepper and chilly flakes along with the basil leaves. Cover it and cook for 20-30 minutes.
    Ingredients for baked mushrooms:
    · 250 gm of sliced mushroom
    · 2 table spoons of olive oil
    · 2 tea spoons of thyme
    · salt
    · black pepper
    · 1 tea spoon of chilly flakes
    Pre-heat oven at 180 degrees Celsius. In a bowl add all the ingredients and mix well. Bake it in the oven till the mushrooms turns brown.

    Assembling of the Cabbage rolls:
    In a baking tray arrange the filled cabbage rolls. Sprinkle tomato sauce and put some baked mushrooms. Bake it for 10-15 minutes at 180 degrees Celsius. Garnish with some cherry tomatoes and basil leaves. Serve hot.
What is homemade paneer? Boil 1 liter of milk, add 2 spoons of lemon juice. Let the milk curdle. Strain and your home made paneer is ready.
