Caramelised Peach Tarts

 

Caramelized Peach tarts

(making 2 tarts)

Ingredients

  • 4 pastry sheets 
  • 2 Ripe Peaches
  • 6 small mozzarella balls
  • ½ cup cherry tomatoes
  • 1 table spoon chopped garlic
  • ¼ cup Cheddar cheese
  • 2 table spoons maple syrup
  • 4 table spoons of balsamic vinegar /truffle balsamic 
  • 4 table spoons of olive oil
  • few fresh/dry thyme
  • 4 table spoon Pesto (recipe given below)
  • few Oregano leaves
  • few Basil leaves
  • salt
  • black pepper
  • Few Arugula leaves

Method:

  • Pre-heat oven at 250 degrees Celsius. In a bowl mix the cut Peaches,1 ½ table spoon of Balsamic vinegar, 2 table spoons of maple syrup, 1 table spoon olive oil, black pepper, salt and thyme leaves. Mix well and in a baking tray arrange the mixture and bake for 30 minutes.
  • In another bowl add cherry tomatoes, 1 table spoon olive oil,1 table spoon of balsamic vinegar, chopped garlic, salt, black pepper & thyme.
  • Take the pasty sheets, cut into squares. Place the first sheet, brush it with olive oil, sprinkle few thyme leaves, place another sheet on it, sprinkle some balsamic vinegar, place another sheet on it and apply Pesto paste generously. Now place the last sheet, brush it with olive oil, place the caramelized Peaches, place few marinated tomatoes with few mozzarellas. Sprinkle cheddar cheese, oregano, salt and black pepper and few basil leaves. Fold the sides and bake it till brown. Once its baked arrange Arugula leaves. Serve hot.

Recipe of Pesto Paste1 cup basil leaves, 20gm pine nuts,20gm walnuts, 3 table spoon olive oil, 2 table spoon chopped garlic, salt,1 table spoon chilly flakes.

  • Grind well in a blender and your Pesto is ready.
