Cheesy Rice with Baked Vegetables & Black Beans (6 persons) This is a complete meal. Flavors of lemon zest along with the paprika & baked vegetables makes it a delicious dish.
Ingredients & methods of Cheesy Rice with Baked Vegetables & Black Beans

    Ingredients for rice:
    · 1 cup brown rice
    · ½ cup raw spaghetti torn in pieces
    · 3 cups of vegetable stock
    · 1 cup boiled tomato puree
    · 3 table spoons of red paprika slice
    · 2 tea spoons of chilly flakes
    · salt
    · black pepper
    · 2 table spoons of chopped garlic
    · 2 table spoons of grated ginger
    · 2 table spoons of Olive oil
    · 1 cup grated cheese

    In a pan add olive oil, sauté garlic and grated ginger. Add red paprika slices and sauté. Now add soaked rice and dry noodles and sauté for a minute. Add the tomato puree, salt, black pepper and chili flakes. Sauté again, add the vegetable stock and cover and cook on slow flame till the rice and noodles are cooked.
    Ingredients for black beans:
    · 1 black beans can (or ½ cup kidney soaked and boiled)
    · 1 lemon zest
    · 2 table spoons of lemon juice
    · 2 table spoons of chili flakes
    · salt, black pepper
    · 1 table spoon of fresh oregano (dry is also fine)
    · 1 table spoon of thyme (dry is also fine)
    · 2 table spoons of olive oil
    In a pan add olive oil, add chili flakes and lemon zest and sauté for few seconds, add fresh oregano and thyme and sauté again. Add black beans, salt, pepper and lemon juice. Sauté and keep it aside.
    Ingredients for roasted vegetables:
    · 1 cup cubed cottage cheese
    · 1 cup sliced mushrooms
    · ½ cup chopped red bell pepper
    · ½ cup chopped onion
    · 2 table spoons chopped garlic
    · 2 table spoons grated ginger
    · 1 table spoon of lemon zest
    · 2 table spoons of lemon juice
    · ¼ cup of chopped coriander
    · 2 table spoons of olive oil
    · few fresh /dry oregano
    · few fresh /dry thyme
    · red chili flakes
    · black pepper
    Add all ingredients in a bowl and mix well. Pre-heat oven at 180 degrees Celsius. In a baking tray put butter paper and spread the mix and bake it for 20 minutes. Please don’t add salt to it otherwise mushrooms will leave water.

    Assembling of the cheesy rice with baked vegetables:
    · In a bowl mix rice and black beans. Arrange a layer in a baking dish. Arrange a thick layer of baked vegetables and cover it with a layer of cheese. Bake it till cheese turns brown. Serve hot with slices of avocado and bread.
