Ingredients & methods of Corn Capsicum Quesadilla

    1 cup boiled corn kernels
    1 finely chopped onion
    1 finely chopped capsicum
    1 table spoon grated ginger
    3 table spoons Maida(all-purpose flour)
    ½ cup grated cheese
    2 tortilla wraps
    1 ½ cups milk
    salt to taste
    1 tea spoon chilly flakes
    1 tea spoon mixed herbs
    2 table spoons butter +little more
    1 table spoon chopped jalapeno
    1 tea spoon black pepper

    In a pan add butter, chopped onion, jalapeno and chopped capsicum. Sauté it for 2-4 minutes. Add grated ginger. Now add the flour and sauté for a minute. Add the milk and cook till it thickens. Add basil leaves, salt, black pepper, chilly flakes, Mixed herb and grated cheese. Cook for a minute. Add the boiled corn and cook for a minute.

    In a pan add a small quantity of butter and place the tortilla. Layer the corn mixture on the tortilla and top it with another tortilla. Let the tortillas cook from both the sides till it turns brown. Serve it hot with sour cream, mayonnaise or Sriracha.
