Crunchy Kale Pumpkin Salad (serves 4)
Ingredients & methods of Crunchy Kale Pumpkin Salad

    8-10 American Kale leaves
    2 cups cubed pumpkin
    ½ cup parmesan cheese
    ¼ cup feta cheese
    few Pine nuts
    1 table spoon paprika
    3 table spoon olive oil
    1 tea spoon black pepper

    Pre-heat the oven at 200 degrees Celsius. In a baking tray add the pumpkin, paprika, salt, black pepper and a spoon of olive oil. Mix well and bake it in the oven for 20 minutes.
    On a plate place the kale, 2 table spoons olive oil, parmesan cheese, salt and black pepper. Mix it well with hand and place it in the oven at200 degrees Celsius for 10-15 minutes. The kale will get little crunchy.
    Ingredients for dressing

    2 table spoons olive oil
    2 table spoons maple syrup
    1 table spoon balsamic vinegar
    1 table spoons chilly flakes
    pinch of salt
    pinch of black pepper
    Mix all the ingredients in a bowl. Whisk it well with a fork or spoon.

    Assembling the salad
    On a plate arrange the crunchy baked Kale. Arrange baked pumpkin on the top. Place feta cheese and pour the dressing generously. Garnish with roasted pine nuts.
