Grilled Papaya goat cheese salad 

 
Grilled Papaya goat cheese salad  (serves 4) Ingredients
  • 1 ripe Papaya
  • 80 gm fresh goat cheese
  • Arugula leaves
  • Lettuce 
  • 2 table spoons olive oil
  • ½ cubed avocado
  • few cherry tomatoes
  • ½ cup dressing (recipe given below)
Method:
  • Cut the Papaya into 2 pieces lengthwise. Scoop the seeds. Heat the griller, add olive oil to the griller and place the papaya to grill. Cover it with a lid and let it grill for 5 minutes on a slow fire. 
Ingredients for the dressing
  • 6 table spoons olive oil
  • 2 table spoons red wine vinegar
  • 2 table spoons sriracha/ chilly sauce
  • 4 table spoons finely chopped shallots
  • 2 table spoons finely chopped garlic
  • 1 table spoon onion powder
  • 2 table spoons lemon juice
  • 2 table spoons brown sugar
  • 1 tea spoon black pepper
  • salt to taste
Method:
  • In a blender mix all the ingredients and churn for 15 seconds. Dressing is ready.
Assembling of the salad
  • Place the grilled Papaya on a platter. Place lettuce leaves in the hollow papaya. Cut the goat cheese into pieces. Place 3-4 pieces of goat cheese, 3-4 pieces of avocado, 2-3 cherry tomatoes and few arugula leaves. Sprinkle 2-3 table spoons of dressing and place 1-2 pieces of more goat cheese. Enjoy the salad with the spoon scooping the grilled papaya as well.
Note: Take ripe Papaya not over ripe otherwise you won’t be able to enjoy  scooping the grilled papaya.
