Grilled & Smoked Tofu with Barbeque Pineapple & Baked Cherry Tomatoes (6 servings)

The smoke flavor of tofu & barbequed pineapple compliments to each other and baked cherry tomatoes enhance the look of the platter.
Ingredients & methods of Grilled & Smoked Tofu with Barbeque Pineapple & Baked Cherry Tomatoes

    Ingredients for Grilled smoked Tofu:
    · 1 packet of silken firm tofu
    · 2 table spoons of grated garlic
    · 2 table spoons of grated ginger
    · 3 table spoons of peanut butter
    · 3 table spoons of soya sauce
    · 2 table spoons of chili sauce
    · 1 table spoon of chili flakes
    · pinch of salt & black pepper
    · 2 table spoons of olive oil
    · 1 table spoons of maple syrup
    · 2 table spoons of lemon juice
    · 1 charcoal
    · shallots & scallions to garnish

    Tap the tofu with tissue to soak the excess water. Cut it into strips. In a bowl add peanut butter, garlic, ginger, maple syrup, soya sauce, chili sauce, olive oil, lemon juice, chili flakes and salt & pepper. Mix well. Coat it well on all sides on the tofu. Keep it marinated for 1-2 hours.
    Ingredients for barbeque pineapple:
    · 1 Pineapple (you can take either a tin or fresh, if you are using fresh than apply brown sugar to the pineapple first).
    · 3 tablespoons of barbeque sauce
    · pinch of salt & black pepper
    · 1 tea spoon of chili flakes
    Take the pineapple slices. Apply the barbeque sauce nicely on it. In case you are using fresh pineapple then put some brown sugar on pineapple. Sprinkle salt, chili flakes and black pepper. Keep it aside.
    Ingredients for cherry tomatoes:
    · 200 gm of cherry tomatoes
    · 2 table spoon of olive oil
    · fresh oregano & thyme (can use dry as well)
    · 1 table spoon of lemon juice
    · pinch of salt &black pepper
    In a bowl add all the ingredients. Bake it for 7-10 minutes in pre-heat oven at 175 degrees Celsius.

    Grilling the Tofu & Pineapple:
    On the burner place the griller. Apply little olive oil and grill tofu and Pineapple. Grill the tofu from all sides. Thus, be careful and handle the tofu delicately. Meanwhile on another burner keep the charcoal to burn. Once your tofu is done place it on a plate and keep the charcoal in a small bowl, add a spoon of ghee and cover it. Kindly follow the video. Arrange in a platter smoked grilled tofu, pineapple and on the side cherry tomatoes. Garnish with shallots & scallions and some fresh thyme.
Tofu is very delicate, handle with care.
