
Ingredients & methods of Guacamole Quesadilla with Zucchini Rolls
Ingredients for Guacamole:
· 2 mashed Avocados
· ½ cup orange juice
· ½ cup cilantro
· ½ cup skinless tomatoes
· 2 tea spoons lemon juice
· 2 tea spoons jalapeños
· 2 table spoons Paprika
· ½ cup shallots
· 1 table spoon orange zest
· 2 table spoons chopped garlic
· black pepper
· salt
· 2-3 table spoons of olive oil
· 4 tortillas
- In a bowl add mashed avocados. Mix all the ingredients and mix well. Keep it aside.
- · 2 Zucchini
· 2 table spoons of olive oil
· ¼ cup finely chopped red bell pepper
· ¼ cup finely chopped onions
· 2 table spoons chopped paprika
· 2 table spoons chopped garlic
· 2 table spoons fresh parsley
· ½ cup homemade paneer
· salt
· black pepper
- · Slice the zucchini. I did in the Potato slices and it came out very well. Heat the griller brush it with olive oil. Arrange the sliced zucchinis and grill from both the sides for 2 minutes. In a blender put the paneer, few parsley, salt & black pepper. Make a nice smooth paste. On the other side in a pan add oil, sauté chopped garlic, onions, paprika and red bell pepper. Sauté for 2 minutes on high flame. Add the Paneer paste, salt & black pepper. Mix well. Now take the zucchini slices, place the mix and roll it.
Arranging the guacamole
In a pan brush, some butter. Place a tortilla, arrange a nice layer of guacamole and place another tortilla. Let it cook nicely from both the sides till it get brown. Serve hot with hung curd dip or sour dip.
