HUMITAS, steamed corn cakes (Makes 8 Humitas) Ingredients: · 4 American corns with the husk (corn outer coverings) · ¼ cup corn meal · 1 chopped onion · 1 table spoon paprika · 1 table spoon chopped garlic · 1 table spoon grated ginger · 2 table spoons chopped Basil · 3 table spoon butter · 3 table spoons cheese(optional) · 1 cup boiling water · black pepper · salt · some lemongrass strings to tie Method: · Remove the husk of corn gently. Keep it aside. Now take out the corn kernels. Keep 2-3 table spoon aside. In a blender add corn kernels, ginger and garlic. Make a smooth paste. In a pan add the butter, add paprika and onions sauté, add the corn paste, salt, black pepper & basil leaves. Cook on a slow fire for 20 minutes. Add the corn meal and hot water and cook for another 10 minutes. Add cheese and cook for 5 minutes. · In a bowl add boiling water and place the corn husks. Remove them after 3-4 minutes. Dry them with tissue. · Now place two spoons of cooked corn mixture in the center of the corn husk and fold like an envelope (as shown in the video) String it with the lemongrass leaves. Steam for 15-20 minutes. Serve with chilly mayo sauce, chilly sauce.
