Jalapeno Aglio e oili (serves 4)
Ingredients & methods of Jalapeno Aglio e oili

    250 gm spaghetti 
    1 cup cherry tomatoes
    1 table spoons shallots
    ¼ cup parsley
    2 table spoons chopped garlic
    2 fresh sliced Jalapeno
    2 table spoons lemon juice
    ¼ cup freshly grated parmesan cheese
    1 tea spoon black pepper
    3 table spoons olive oil
    ¼ cup of spaghetti water
    salt to taste

    Boil the spaghetti as per the instructions on the packet.
    In a pan add 1 table spoon of olive oil, jalapeno and cherry tomatoes. Sauté for a minute on a high flame. Add a pinch of salt, black pepper and 1 tea spoon of lemon juice. Switch off the flame.
    In a pan add 2 table spoons of olive oil, 2 table spoons of chopped garlic and shallots. Sauté for a minute. Add 2 table spoons of lemon juice and ¼ cup of pasta water. Add black pepper and salt and let it boil. Now add the boiled spaghetti and toss well. Add fresh Parsley.
    Just before serving add the sautéed jalapeno and cherry tomatoes. Garnish with Fresh parmesan cheese.
If you are fond of spicy Aglio e oili add 1 tea spoon of chilly flakes.
