Khachapuri with Spinach & Mushrooms (makes 2 and serves 6)
Ingredients & methods of Khachapuri with Spinach & Mushrooms

    Ingredients for Khachapuri

    2 cups of all-purpose flour
    2 table spoons olive oil
    ½ cup warm water + more if required
    ¼ cup almond milk
    1 table spoon instant yeast
    1 table spoon sugar
    pinch of salt 
    ½ cup shredded feta cheese
    ½ cup shredded mozzarella
    ½ cup processed cheese
    chilly flakes

    In a standing mixer add all-purpose flour, olive oil, almond milk, yeast, sugar, salt, and little warm milk. Start kneading the batter. Add water as required. Knead for 3-5 minutes on a slow speed. Now knead a bit on a clean floor, make a ball and cover with a cling foil. Place a damp cloth on the above and place at a warm place for an hour to rise. Meanwhile in a bowl combine all three cheeses and refrigerate till you need to fill it in Khachapuri. After one hour take out the dough and put it on a clean surface with some flour and knead well for 3-4 times. Divide into two equal portions. Pre-heat the oven at 200 degrees Celsius. Roll one of the dough in a rectangle shape till it becomes 8*10 inches. At both the corners place a line of mixed cheese and roll it twice. Make it like a boat shape. Kindly refer to the video for this. Sprinkle little cheese in the center as well and keep it for baking at 200 degrees Celsius for 20 minutes.
    1 ½ cup chopped Spinach
    1 cup sliced mushroom
    ½ cup finely chopped onion
    2 table spoons chopped garlic
    ½ cup grated processed cheese
    2 table spoons fresh cream
    2 table spoons butter
    2 table spoons flour(maida)
    1 tea spoon oregano
    1 tea spoon chilly flakes
    1 tea spoon black pepper
    ½ cup water/milk
    In a pan heat the butter, sauté onion and garlic for a minute. Add sliced Mushrooms and sauté again. Add chopped spinach and sauté again. Add salt, chilly flakes, black pepper and oregano. Add the flour(maida) and sauté for a minute again. Now add milk/water stirring continuously. Add fresh cream and cheese.
    Assembling of the Khachapuri

    Once the Khachapuri is half baked with the cheese, fill the spinach mushroom filling in the center and bake it again for ten minutes at 200 degrees Celsius. Sprinkle few red chilly flakes and serve hot.
