Lemon Asparagus Spaghetti with Balsamic Cherry Tomatoes
Lemon Asparagus Spaghetti with Balsamic Cherry Tomatoes (serves 4)
Ingredients & methods of Lemon Asparagus Spaghetti with Balsamic Cherry Tomatoes

    200 gm spaghetti (boil as per the instruction on the packet)
    2 table spoons olive oil
    7-8 fresh asparagus
    ½ cup freshly grated parmesan+ ¼ cup more to garnish
    6-7 Basil leaves+ 2 chopped basil for garnishing
    2 table spoons chopped garlic
    3 table spoons lemon juice
    1 table spoon lemon zest
    1 table spoon chilly flakes+ few more to garnish
    1 tea spoon black pepper
    salt to taste
    ¼ cup pasta water
    1 table spoon truffle oil (optional)

    Boil the spaghetti as per the instruction on the packet. In a pan add olive oil and garlic and sauté for a minute. Add asparagus and cook for another 2 minutes. Add lemon zest, chilly flakes, lemon juice and pasta water. Cook for another 2 minutes. Add boiled spaghetti, salt and basil leaves. Toss well and add ½ cup parmesan cheese. 
    Ingredients for Balsamic cherry tomatoes

    1 cup cherry tomatoes
    1 table spoon olive oil
    1 table spoon balsamic vinegar
    1 table spoon chopped garlic
    1 tea spoon fresh/dry oregano
    1 tea spoon black pepper
    salt to taste
    Pre-heat the oven at 200 degrees Celsius. In a bowl add all the ingredients and mix well. Place it in a baking tray and bake for 10 minutes.
    Assembling the dish

    In a plate place the lemon asparagus spaghetti. Place the balsamic cherry tomatoes on it. Garnish with 1 spoon of truffle oil, chilly flakes, parmesan cheese and chopped basil.
