Mango Sandesh Cake

 
Mango Sandesh cake (½ kg cake) (8 servings) Ingredients: · 4 finely chopped Mangoes · 2 liters of full fat milk · 50 gm sugar · 3-4 table spoons of lemon juice · ¼ cup chopped pistachio · 1 table spoon saffron Method: · Boil the milk. Add 2-3 spoons of lemon juice. Let the milk curdle. If you feel the milk has not curdle properly, then add little more. Strain the curdle milk for 20 minutes. Take a pan, add the paneer to it, sauté for 5 minutes, add the sugar & saffron and sauté for next 5-10 minutes. · In a blender add the cooked paneer and 1 serving spoon of chopped mango. Whisk for 2-3 times. Your Sandesh paste is ready. · Take a hollow round tin. Place the cake board, put the hollow round tin on it. Put a layer of the Sandesh paste, on top of it arrange a layer of chopped mangoes, again layer of Sandesh Paste. Press it gently. Now remove the tin. Again, arrange a layer of chopped mangoes, sprinkle chopped pistachios & saffron. Whipped mango cream icing: 1 cup whipped cream & 3 table spoons mango puree. Whip the cream till it form peaks, add mango puree and whip for few seconds.
