Ingredients & methods of Moroccan Vegetable Couscous

    1 cup cooked couscous
    · 1 cup cooked chickpeas
    · 1 finely chopped onions
    · ¼ cup sliced mushrooms
    · ¼ cup of mixed yellow & red bell pepper
    · ¼ cup broccoli
    · ¼ cup chopped carrots & zucchini
    · 2 baby corns sliced
    · 2 table spoons paprika
    · ¼ cup Cilantro
    · 1 cup chopped tomatoes without skin
    · 10-15 basil leaves
    · 2 table spoon grated ginger
    · 1 table spoon orange zest
    · 2 table spoon olive oil
    · salt
    · black pepper
    · 1 cup vegetable stock / water of boiled couscous
    . few roasted almonds to garnish

    · In a pan add olive oil. Add onions and sauté. Add paprika and grated ginger. Now add all the vegetables other than tomatoes Sauté on high flame for 2 minutes. Now add chopped tomatoes, salt, orange zest, basil leaves and sauté. Add chickpeas, vegetable stock, couscous, salt & pepper. Cook for 2-3 minutes. Garnish with Cilantro & roasted almonds . Serve hot with mayo chilly sauce or chilly sauce.
