Mushroom Chimichurri Burger

 
Mushroom burger with Chimichurri and Burrata cheese Ingredients for mushroom patty
  • 4 burger buns
  • 200 gm of finely chopped mushrooms
  • ¼ bowl of finely chopped shallots
  • 2 table spoons chopped garlic
  • ¼ bowl of finely chopped green capsicum
  • 1 table spoon olive oil
  • 3 slices of bread
  • 2 table spoons of corn flour
  • 1 tea spoon chilly flakes
  • black pepper
  • salt
  • 1 Burrata ball sliced into 4 pieces
  • few Onion slices
  • Lettuce
  • Mayo Chilly sauce
Method 
  • In a pan add olive oil, add shallots & garlic. Sauté for a minute add chopped capsicum and mushrooms. Sauté till the water from mushroom mixture evaporates. Once it dries up add salt, pepper and Chilly flakes. Toss well and let it cool. In a bowl add water, soak the bread slices for 2 second and squeeze the bread and remove water. Add to the mixture along with corn flour. Mix well and make the round patty. Pre-heat oven at 200 degrees Celsius. In a baking tray place butter paper, dust some flour and place the patty and bake for 20-30 minutes.
Ingredients for chimichurri sauce
  • 1 cup parsley
  • few Oregano leaves
  • 3 red chilies
  • 2 table spoons of garlic
  • 2 table spoons red wine vinegar
  • 3-4 table spoons olive oil
  • 3-4 table spoons water
  • salt
Method
  • Mix all the ingredients in a grinder and make a smooth paste. Your Chimichurri sauce is ready.
Assembling the burger
  • Slice the burger into two, on one side apply chimichurri sauce and on the other chilli mayo sauce. Place the mushroom patty, on top of it Burrata cheese, a sliced onion and lettuce. Cover with the sliced burger on the top. Heat it in the oven or microwave for a minute. Serve warm with some French fries and sauté vegetables.
