Mushroom Spinach mini Fillo tarts

 
Mushroom Spinach mini Fillo tarts (makes 8 tarts) Ingredients:
  • 3 Fillo sheets
  • 15 sliced button mushrooms
  • 1 cup chopped spinach
  • 1 finely chopped onion
  • 2 table spoons chopped garlic
  • 1 table spoon paprika
  • ½ cup freshly grated parmesan cheese
  • 1 tea spoon black pepper
  • 1 tea spoon red chilly flakes
  • freshly chopped basil + few more to garnish
  • 1 tea spoon fresh/dry thyme
  • 2-3 table spoons olive oil
  • Almond milk to grease(optional)
  • Salt to taste
  • Round cutter 
Method:
  • In a pan add a table spoon of olive oil, chopped garlic, onion and sauté well. Add the sliced mushrooms and sauté till they turn little brown. Add paprika, chilly flakes, black pepper, thyme, salt and spinach. Cook for a minute and add chopped basil leaves. Keep it aside.
  • Take all the three Fillo sheets together and cut it into round with the help of cutter.
  • Pre-heat the oven at 200 degrees Celsius. Take a cup cake tin and brush it with olive oil. Place the round Fillo sheet in the tin. Press it well. Add 2 table spoons of mushroom spinach filling on it. Cover it with parmesan cheese. Bake it for 15-20 minutes.
  • Garnish with fresh basil and serve with Chilly sauce or mustard sauce.
