Orzo Pasta Salad with Goat Cheese (serves 4)
Ingredients & methods of Orzo Pasta Salad with Goat Cheese

    1 cup boiled orzo pasta
    1 cup steamed broccoli and baby corn
    1 cup chopped kale/ lettuce
    ¼ cup cubed yellow/red bell pepper
    4-5 table spoons goat cheese
    1 tea spoon chopped rosemary
    1 tea spoon lemon zest
    1 table spoon olive oil
    pinch of salt

    In a bowl add the boiled orzo pasta along with steamed broccoli and baby corn. Add chopped bell pepper, rosemary, lemon zest and Kale. Sprinkle a pinch of salt and a table spoon of olive oil. Toss it well and add the goat cheese.
    Ingredients for dressing

    2 table spoons olive oil
    1 table spoon maple syrup
    1 table spoon chopped garlic
    2 table spoon lemon juice
    1 tea spoon black pepper
    salt to taste
    In a bowl add olive oil, maple syrup, chopped garlic, lemon juice, salt and black pepper. Whisk it well.

    Assembling the salad
    Arrange the salad in a desired bowl. Just before serving whisk the dressing and pour it on the salad.
