Paan Kulfi (Betel leaf ice-cream)
Ingredients & methods of Paan Kulfi

    1 liter milk
    ½ cup sugar
    2 tablespoons corn flour with ¼ cup of cold milk
    ¼ cup of pistachio
    4 fresh paan  leaves
    2 spoons of saunf (fennel seeds)
    ¼ cup of fresh cream

    Boil the milk till it becomes half. Add the sugar and let it boil for another 5-10 mins. Mix the corn flour in cold milk and add to the boiling milk. Keep stirring. Add fresh cream to it. Let it cool. In case you feel there are lumps in your milk, churn it in a mixer but only when it gets cool. In a mixer add pistachio, pan leaves and sauf( fennel seeds) and churn it for 2-3 times. Add to the milk. now put in a tinned box. After 3 hours churn the whole thing in the mixer, this is to avoid the water crystals. Now set the kulfi in which ever container, individual stick or in an ice tray like our grandmother n mother use to do it. Trust me you will love this kulfi.
