Pumpkin salad with pumpkin seeds

 
Pumpkin salad with pumpkin seeds (serves4) This is a little spicy salad but with a lovely flavor of pumpkin and crunchy pumpkin seeds. If you want is less spicy replace chilli flakes with black pepper. But have to try this , you won’t regret . This is not a warm salad , thus prepare everything before and assemble when you are about to eat . 1. Ingredients for Pumpkin · ½ Kg Pumpkin · pinch of salt · 2 spoon olive oil · 2 spoon honey (Maple syrup, brown sugar) · 2 spoon of chili flakes · pinch of cinnamon powder Method · Slice the pumpkin in about ½ inches thick. Mix all the ingredients together and bake it on a preheated oven at 175 degrees Celsius for 30 minutes. 2. Ingredients for Roasted pumpkin seeds · 1 cup pumpkin seeds · 2 spoon olive oil · 1 spoon chili flakes · pinch of salt · 2 spoon of honey / maple syrup Method · Mix all the ingredients in a bowl and bake it for 3-5 minutes at pre-heated oven. Please keep a close watch as the seeds gets burnt very fast. If they burn the whole taste goes away. 3. Other Ingredients · 1 bowl of lettuce · 1 bowl of pomegranate · 1 bowl of spinach · 3 spoon of roasted sesame seeds 4. Recipe of dressing for the salad Ingredients: · 4 tablespoon of olive oil · 1 tej patta · ¼ cup of chopped shallots · 2 spoon of wine vinegar · 1 spoon of maple syrup · 1 spoon of chili sauce · 2-3 spoons of balsamic vinegar (would prefer truffle balsamic) · 1 lemon juice( 2 spoons ) · 1 tea spoon lemon zest /orange zest · 1 spoon chili flakes · ¼ cup of orange juice/ pomegranate juice Method: · Heat the oil in the pan. Add tej patta and shallots together. Sauté for a minute. Take it off the flame. Let it cool. Add all the ingredients and mix well. Your dressing is ready. Assembling the salad: · Now all your salad stuff is prepared. In a platter place lettuce and spinach. On top add roasted pumpkin. Sprinkle pomegranate all over generously. Now sprinkle roasted pumpkin seeds. Sprinkle all the dressing over the salad. Garnish with toasted sesame seeds.
