Pumpkin soup 

Ingredients 

½ kg pumpkin into pieces

1 spoon dried thyme

4 cloves garlic

2 cups vegetable stock

1 cup coconut milk

salt

pepper

Method 

Preheat the oven at 200 degrees Celsius. Wrap pumpkin, thyme and garlic in a foil paper tightly. Bake it for 30-35 mins. Churn it in a mixer. Add vegetable stock, coconut milk, salt and pepper. Serve it hot with parsley or coriander leaves.

Notes: This is a very easy, quick and healthy soup. Once you make it I am sure it will be your favorite soup.
