Quinoa salad with grilled cottage cheese and teriyaki sauce (4 servings)
Ingredients:
· 1 cup of quinoa · 200 gm of cottage cheese into cubes (paneer) you can also use tofu or halloumi cheese · 1 red bell pepper chopped in pieces approx. 1 inch · 1 green bell pepper chopped in pieces approx. 1 inch · 1 carrot finely sliced length wise · 2 table spoons of shallots · 2 table spoons of chopped garlic · 2 table spoons of sesame oil · 2 table spoons of scallions · 1 table spoon of roasted sesame seeds (optional) · salt · black pepper · ½ cup of teriyaki sauce (recipe given below, this is most important ingredient) Method · Boil the quinoa. Strain it and uplift the quinoa with the fork. This is very important whenever you are making quinoa. In a grill pan add 1 table spoon of sesame oil and grill it from both the sides. Keep it aside. In another pan take 1 table spoon of sesame oil sauté shallots, garlic for a minute. Add both the capsicums along with the carrot. Sauté on high flame for a minute, add salt and black pepper. Keep it aside. Recipe of teriyaki sauce: Ingredients: · 1 table spoon of sesame oil · 2 table spoons of chopped garlic · 2 table spoons of grated ginger · 2 table spoons of mirin (substitute of mirin – ¼ cup of white wine and add 2 spoons of sugar to it) But Mirin is easily available · 2 table spoons of soya sauce · 2 table spoons of rice wine vinegar · 1 ½ table spoon of maple syrup /honey · 2 table spoons of brown sugar · salt · black pepper · 2 table spoons of corn flour dipped in 4-5 table spoons of water. Method · In a pan add sesame oil, sauté shallots, garlic with pinch of salt for a minute. Add grated ginger to it and sauté again. Add mirin, soya sauce, vinegar, maple syrup, brown sugar, salt and black pepper. Sauté it and add the corn flour dipped in water. Sauté it for a minute and take it out in a bowl. Your teriyaki sauce is ready. Assembling of the salad: · In a platter arrange the quinoa, top it with the cooked vegetables. Arrange the grilled paneer and pour the teriyaki sauce on it. Garnish with the scallions and toasted sesame seeds. My advice: In this most important flavor is of teriyaki sauce. So, make the sauce perfectly and enjoy the salad.
