Quinoa Salad with peanut butter

 
Quinoa Salad with peanut butter dressing (4-5 persons) Ingredients: · 1 ½ cup of cooked quinoa. · ½ cup purple cabbage · ½ cup red bell pepper · ½ cup shallots · ½ cup scallion ( spring onion leaves) · ½ cup onions. · ½ cup carrot · salt · Mint leaves to garnish Method: · Mix all the ingredients and toss is well. Arrange in a platter. Top it with the peanut butter dressing and garnish with mint leaves. Ingredients for peanut butter sauce: · 2 spoons of peanut butter · 2 spoons of sesame oil · 2 tablespoons garlic · 1 table spoon grated ginger · 2 table spoons of soya sauce · 1 table spoon of maple syrup · 1 table spoon of red chili sauce · 1 spoon red wine vinegar · salt and pepper Method: · In a pan heat sesame oil. Add garlic and grated ginger to it. Sauté for a minute. Add a pinch of salt while you are sauté garlic and ginger. Add, peanut butter, soya sauce, maple syrup, chili sauce and vinegar. Sauté for a minute. Mix it well. In case it is very thick add 1 spoon of water to it. Notes: When I say cup it’s a Measurement cup. In case you are using bowls from home in which you eat food make it double.
