
Ingredients & methods of Ramen Noodle Vegetable Salad with Jalapeno Peanut Butter Dressing
- 200 gm Ramen noodles
- ¼ cup thinly sliced zucchini
- ¼ cup thinly sliced red bell pepper
- ¼ cup thinly sliced paneer
- ¼ cup thinly sliced carrot
- ¼ cup thinly sliced green bell pepper
- ¼ cup finely chopped scallions
- 2 table spoons chopped garlic
- 1 table spoon paprika
- 2 bunches Lolo roso lettuce
- 3 table spoons roasted peanut + 1 table spoon to garnish
- 3 table spoons chopped cilantro
- 3 table spoons chopped basil
- 1 tea spoon black pepper
- salt to taste
- 1 table spoon olive oil
- Boil the noodles as per the instruction on the packet. Add all the ingredients except the lettuce in a big bowl and toss it well.
- Ingredients for Jalapeno peanut butter dressing:
- 2 tablespoons olive oil
- 2 tablespoons red wine vinegar
- 2 table spoons dark soya sauce
- ¼ cup peanut butter
- 1 table spoon maple syrup
- 2 table spoons lemon juice
- 2 table spoons chopped jalapeno
- 1 tea spoon black pepper
- salt to taste
- 4 table spoons water
- In a grinder mix all the ingredients and churn well.
Assembling of the salad:
Arrange the salad on a platter. Place roughly torn lettuce. Sprinkle the jalapeno peanut butter dressing and garnish with a spoon of roasted peanut.
