Salmorejo – Spanish Cold Soup (serves 4) This is a Spanish soup and in this summer heat you will really relish.
Ingredients & methods of Salmorejo – Spanish Cold Soup

    · 6 Tomatoes
    · 1 green bell pepper
    · 4-5 cloves of garlic
    · few mint leaves
    · salt
    · black pepper
    · 2 spoons of red wine vinegar / vinegar/white wine vinegar
    · 3 spoons of olive oil
    · 1 ½ slice of bread

    · Dip the bread in the water, squeeze and remove the water. In a blender mix all the ingredients including the bread. Blend it till it becomes a puree.
    · Chopped green bell pepper
    · Mint leaves
    · Scallions
    · Coriander leaves
    · Few crunchy pumpkin seeds (recipe below)
    Assembling of the soup:
    In a soup bowl pour the tomato puree prepared. In the center garnish with little bell pepper, mint leaves, scallions, coriander leaves and crunchy pumpkin seeds. Keep it in the fridge for an hour and serve it cold.

    Recipe of crunchy pumpkin seeds:
    In a pan add 1 spoon of olive oil, add handful of pumpkin seeds, sauté for 1 minute. Add 1 tablespoon of maple syrup and 1 tea spoon of chili flakes. Sauté for another 1 minute and remove from the fire.
