Sandwich Kabab

 
       Sandwich  kabab (makes 12 kababs) Ingredients for kabab: · ¾ cup rajma (kidney beans) · 1 cup soya chunks · 1 onion sliced · 6 cloves of minced garlic · 2 table spoons of ginger · 3 green chillies · 1 spoon butter · 10 pieces of cashew nuts · ½ cup of mint leaves · ½ cup of coriander leaves · 5 table spoons besan (gram flour) · 2 table spoons garam masala · 2 tea spoons of rose water · salt · 1 lemon juice · 2 table spoons of ghee or butter + 2 table spoons for brushing the tikkis · 4 table spoons of fresh malai/ fresh cream Method: · Soak the rajma (kidney beans) for 4-5 hours (better for overnight). Take 4-5 whistle in pressure cooker. Strain and keep it in the strainer for 1 hour. In another pan boil the water and soak the soya chunks for 20 minutes. Strain and squeeze all the water. Pre-heat the oven at 175 degrees Celsius. In a baking tray place the onions, ginger, garlic and green chilies. Sprinkle the butter on it and bake it for 20 minutes. Now add all the ingredients in a blender including rajma, kidney beans, baked onions and make a smooth paste. Make small flat patty and cook on a nonstick pan with little ghee. Ingredients for nan: · 1 cup maida (refined flour) · ¼ cup of wheat flour · ¼ cup curd · pinch of salt · 1 table spoon black sesame seeds Method: · In a bowl add maida(refined flour) , wheat flour ,curd ,oil and pinch of salt. Add little water and knead the dough. If the dough is little wet you can apply dry maida to it and knead it to make it little tight. Keep the dough covered with a wet cloth in a glass bowl for 30-50 minutes. Again, knead the dough and make small roti (as shown in the video) and cook on a pan from both the sides. Do not apply any oil to it. Recipe for green chutney: · 1 cup fresh coriander leaves, hand full of mint leaves, 2 table spoons curd, 3-4 green chillies,1 lemon juice, 1 tea spoon sugar, salt and a small pinch of hing (asafetida) and grind it in blender till smooth. Garnishing: · 1 onions sliced round · few mint leaves Assembling of the sandwich nan kabab: · Take one roti, place the kabab on it, put one table spoon of green chutney to it, place one round onion and again top it with the roti. Garnish with a mint leaves. Please refer to the video. My advice to you: The malai or the fresh cream plays important role thus try and put the same quantity . Also for the green chutney don’t add anything else other than the recipe.

    My advice to you:
