Soba Noodles Salad with Grilled Cottage Cheese and Peanut Sauce (serves 4)
Ingredients & methods of Soba Noodles Salad with Grilled Cottage Cheese and Peanut Sauce

    · 3 bundles of soba noodles
    · 1 cup shredded lettuce
    · 1 cup grated carrot
    · ½ cup shallots
    · 4-5 table spoons of scallions
    · ¼ cup coriander
    · ¼ and basil leaves
    · 1 cup grilled cottage cheese sliced
    · 4-5 table spoons roasted peanut
    · 1 mango sliced
    · ½ zucchini sliced (you can take cucumber as well, remove the seeds)

    Assembling of the salad:
    · Boil the noodles, drain and keep it aside. In a bowl or platter arrange lettuce, grated carrot, shallots, zucchini, basil leaves, coriander leaves, mango slices. Top it with grilled cottage cheese and noodles. Just before serving add the peanut butter sauce and toss it well. Garnish with the roasted peanuts and scallions
    Ingredients for the peanut sauce:
    · ¼ cup of crunchy peanut butter
    · 4-5 table spoons of sesame oil
    · 3 table spoons red wine vinegar
    · 1 ½ table spoons of soya sauce
    · 2 table spoons of Thai red curry paste (recipe given below)
    · 2 table spoons of lemon juice
    · 4-5 cut pieces of canned jalapeno
    · 2 table spoons of maple syrup(honey)
    Method for the sauce:
    Mix all the ingredients and churn in a mixer for 2 minutes and make a nice creamy paste.
    Ingredients for Thai red curry paste:
    · 16 red dry chilies
    · 2 table spoons of grated galangal (you can use ginger if you don’t have galangal)
    · 2 table spoon of lemon zest
    · handful of lemongrass
    · ½ cup coriander
    · 5-6 stems of coriander
    · ½ cup shallots
    · 1 table spoon coriander powder
    · 1 table spoon cumin powder
    · 6 cloves of garlic
    · pinch of salt


    Grind all the ingredients together and make a fine paste. Add half a cup of water if you feel it’s very dry. Your RED THAI PASTE is ready.


    Assembling of the salad:
    Boil the noodles, drain and keep it aside. In a bowl or platter arrange lettuce, grated carrot, shallots, zucchini, basil leaves, coriander leaves, mango slices. Top it with grilled cottage cheese and noodles. Just before serving add the peanut butter sauce and toss it well.
