
Ingredients & methods of Spicy Bok Choy Mushrooms with Garlic Soba Noodles
Ingredients for soba noodles
150 gm of Soba noodles
2 table spoons of tahini
2 table spoons soya sauce
1 ½ table spoons of chilly oil
1 table spoon of Sriracha sauce
2 table spoons of red wine vinegar
2 table spoon of soya sauce
1 spoon of salt
1 tea spoon black pepper
2 table spoons of chopped garlic
2 table spoons of grated galangal/ginger
4 table spoons shallots
2 table spoons of sesame oil
3 table spoons roasted peanuts for garnishing
5 table spoons scallions for garnishing
1 table spoon paprika(optional)
Cilantro for garnishing
1 cup vegetable stock
- Boil the Soba noodles as per the instruction on the packet. In a bowl add tahini, soya sauce, chilly oil, Sriracha sauce, soya sauce, red wine vinegar, salt & black pepper. Mix well, your sauce is ready for soba noodles. In a pan add sesame oil, add garlic, shallots and galangal and sauté. Add the sauce and 1 cup of vegetable stock. Cook for a minute. Add the cooked Soba noodles and toss well. Garnish with roasted peanuts, scallions and cilantro.
- Ingredients for Spicy Bok choy
200 gm of Bok choy
200 gm of sliced mushrooms
2 table spoons chopped garlic
2 table spoons grated ginger
2 table spoons red wine vinegar
2 table spoons soya sauce
2 table spoons sesame oil
salt
black pepper
- In a pan heat sesame oil. Add chopped garlic and grated ginger. Sauté on a high flame. Add sliced mushrooms and again sauté on a high flame. Let the mushrooms get little brown. Add red wine vinegar and toss. At this moment add Bok choy and sprinkle 1 tea spoon of sesame oil, soya sauce, salt and black pepper. Toss on a high flame for 2 minutes. Your spicy Bok choy is ready.
In a platter place Soba noodles and by the side add Bok choy mushrooms. Can sprinkle garlic chilly oil if you like it spicy
