Ingredients & methods of Spicy Peanut Curry with Sesame Seeds

    Ingredients for grilled tofu 

    200 gm of firm silken tofu
    2 table spoons chopped garlic
    2 table spoons soya sauce
    2 table spoons corn flour
    5-8 table spoons of vegetable stock

    In a bowl add corn flour, soya sauce, chopped garlic and vegetable stock. Slice the tofu and sprinkle the soya sauce mixture on it. Let it marinate for 15 minutes. On a griller grill the tofu till it gets little golden.
    Ingredients for Peanut curry 

    3 table spoons of red curry paste (recipe given below)
    3 table spoons of peanut butter
    2 cups of coconut milk
    2 cups of vegetable stock
    2 table spoons sesame oil
    2 table spoons soya sauce
    1 cup red & yellow bell pepper
    ¼ cup roasted peanuts
    5 table spoons shallots
    2 table spoons chopped garlic
    1 bunch of kale leaves
    ¼ cup cilantro
    5 table spoons scallions
    few Basil leaves
    Few roasted sesame seeds(garnishing)
    some lime wedges
    salt & black pepper


    Ingredients for Peanut curry  Red curry paste:
    1 tea spoon of coriander seeds
    1 tea spoons of cumin seeds
    1 roasted red bell peeper
    1 lemon grass stick
    3 dry red chilies
    1 table spoons galangal/ginger
    8 black pepper corns
    5 table spoons shallots
    1 table spoon garlic
    1 table spoon maple syrup
    2 table spoons lemon juice
    2 table spoons soya sauce
    salt
    In a pan add sesame oil, add shallots, chopped garlic and sauté for a minute. Add peanut butter, red curry paste and sauté for a minute. Add the bell pepper, soya sauce, vegetable stock, black pepper & salt. Let it boil. Now add Basil leaves and kale and few lemon wedges. Once it starts boiling add coconut milk and stir continuously. Now add cilantro, few roasted peanuts and few scallions. Add Grilled tofu in it.
    Ingredients for sesame rice

    1 cup basmati rice
    5 table spoons shallots
    2 table spoons chopped garlic
    2 table spoons roasted sesame seeds
    3 table spoons of scallions
    2 table spoons sesame oil
    salt
    black pepper
    Cook the rice as per instructions on the packet. Heat sesame oil in the pan. Add shallots and garlic to it & sauté. Add cooked rice, sesame seeds, salt and pepper. Toss well. Garnish with scallions.

    Serve the rice with the curry and garnish the curry with roasted peanuts , scallions and some lemon wedges.


Grind all the ingredients in a grinder and your red curry paste.
