Spinach with grilled feta cheese & beetroot noodles (6 servings) Ingredients for Spinach · 500 gm of spinach leaves · 2 table spoons chopped garlic · 2 table spoons grated ginger · 1 table spoon of paprika · pinch of salt · 2 table spoons of olive oil Method: · In a pan add olive oil. Sauté chopped garlic & grated ginger with salt. Add paprika to it and sauté again. Put the spinach leaves with some salt. Cook for 2-3 minutes. Keep it aside. Ingredients for feta cheese & sauce · 1 packet of feta cheese · 1 cup bread crumbs · 4 table spoons of corn flour · ¼ cup maple syrup · 1 table spoon orange zest · 3 table spoons freshly grounded black pepper · pinch of salt · 1 table spoon garlic · 1 table spoon grated ginger · 2 table spoon of olive oil · 1 table spoon thyme 2 2 table spoons of lemon juice Method: · In a pan add ½ tea spoon of olive oil. Add the orange zest and sauté for a minute. Take it out and keep it aside. In the same pan add ½ spoon of olive oil, add garlic & ginger and sauté well. Add fresh grounded black pepper and sauté for 30 seconds.Add lemon juice & maple syrup, thyme & salt and cook for 30 seconds. Add the orange zest in it. · Take out feta cheese. Cut it into square pieces. In a bowl add corn flour with little water. Make a paste, Dip the feta in it and coat with the bread crumbs. Grill it on a griller with little olive oil. Ingredients for beetroot & cherry tomatoes · 2 Beetroots · 1 cup of cherry tomatoes · 1 table spoon of lemon zest · 2 table spoon of olive oil · handful of basil leaves · 1 table spoons of chili flakes · 4 table spoons of lemon juice · 1 table spoon of chopped garlic · salt · black pepper · roasted sesame seed to garnish Method: · Make beetroot noodles with Spiro or any other food cutter you have. In a bowl add 1 table spoon of olive oil, garlic, chili flakes, lemon zest and lemon juice. Mix well and spread it on the beetroot noodles. Pre-heat oven at 180 degrees Celsius and bake for 15 minutes. · In a bowl add cherry tomatoes, 1 table spoon of olive oil, basil leaves, salt, pepper and lemon juice. Mix well and bake it in oven for 10 minutes. Assembling the platter · In a plate place the cooked spinach. Top it with grilled feta cheese. Sprinkle the maple sauce, thyme leaves and garnish with cherry tomatoes. On the side place the beetroot noodles.

    Ingredients for Spinach

    · 4 table spoons of lemon juice
    · 1 table spoon of chopped garlic
    · salt
    · black pepper
    · roasted sesame seed to garnish
    Make beetroot noodles with Spiro or any other food cutter you have. In a bowl add 1 table spoon of olive oil, garlic, chili flakes, lemon zest and lemon juice. Mix well and spread it on the beetroot noodles. Pre-heat oven at 180 degrees Celsius and bake for 15 minutes.
