Steamed Bao Buns with Tofu - Korean cuisine at Kitchen by Nidhi
Steamed Bao Buns with Tofu (makes 12 Buns) Ingredients for Bao buns
  • 2 cups flour(maida)
  • 1 table spoon yeast
  • ¼ cup avocado oil + 2 table spoons to brush
  • ¾ cup of luke warm water + little more
  • 2 table spoons sugar
  • 1 table spoon baking powder
  • 1 tea spoon baking soda
Method:
  • In a glass bowl add the luke warm water with sugar and yeast. Stir it and cover it for 5-10 minutes till it becomes frothy. In a Kitchen aid mixer or by hand mix the flour, avocado oil, salt, baking powder, baking soda and the yeast mixture. Knead the dough for 10 minutes till it becomes soft. In a big bowl add 1 tea spoon of avocado oil and place the dough and cover it with the cling foil. Keep it for 1-2 hours to rise the dough.
  • Knead the dough slightly on a clean surface and cut it into 12 equal portions. Make a smooth ball of each and roll it to make a circle as shown in the video. Now fold them and brush it avocado oil. Cut the butter paper into small square pieces. Place each folded Bao buns on the butter paper and again cling foil it for half an hour.
  • In a big vessel put little water and place the bamboo steamer. Place the Bao buns on it and steam it for 5-10 minutes as shown in the video.
Ingredients for Tofu
  • 200 gm of firm silken tofu
  • 3 table spoons corn flour
  • 2 table spoons chopped garlic
  • 1 table spoon grated ginger
  • 5 table spoons dark soya sauce
  • 3 table spoons red wine vinegar/ plain vinegar
  • 2 table spoons maple syrup
  • salt
  • 2 table sesame oil
Method:
  • In a bowl add chopped garlic, grated ginger, soya sauce, red wine vinegar, maple syrup and salt. Mix well.
  • Cut the tofu in cubes. Sprinkle corn flour and coat them nicely. In a frying pan add sesame oil and sauté tofu till golden brown. Add the soya sauce mixture and cook for 2-3 minutes.
Ingredients for pickled vegetable
  • 1 cup sliced carrots
  • 1 cup sliced red and yellow bell peppers
  • 1 cup sliced zucchini
  • 2 table spoons brown sugar
  • 5 table spoons rice vinegar
  • salt
  • 1 cup water
Method:
  • in a pan add water, brown sugar, salt and vinegar. Let it come to boil, add all the vegetables and cook for 5 minutes. Switch of the flame and let the vegetable be in the pan for half an hour. Now strain the pickled vegetables.
For Garnishing:
  • ¼ cup scallions
  • 3 table spoons roasted sesame seeds
  • 2 table spoons chopped jalapenos’
Assembling the Steamed Bao Buns:
  • Take the steamed buns, place 3-4 pieces of soya tofu , place few pickled vegetables and garnish with scallions, jalapenos and sesame seeds. Serve hot.
