Ingredients for sticky rice
1 cup sticky rice
1 cup coconut milk (take full cream)
3 table spoons brown sugar/white sugar
½ tea spoon / 2 pinch of salt
½ cup water
1 stick of lemongrass
1 mango sliced
few toasted black sesame seeds
- Wash the sticky rice 5-6 times and soak them in water for minimum 4-5 hours. In a pan which can be covered add water, coconut milk, sugar, salt and lemongrass stick. Let it come to boil add the soaked sticky rice. Stir it once and cover it with the lid and let it cook on slow fire for 15-20 minutes. Remove the lemongrass.
- Ingredients for coconut cream
1 cup coconut milk
2 table spoons corn flour/rice flour
3 table spoons of brown sugar
1 pinch of salt
- In a bowl add 5 table spoons of coconut milk and 2 table spoons of corn flour. Mix well. In a pan add the coconut milk, sugar and salt.
Let it come to boil, add the corn flour mixture to it. Keep stirring it. When it gets little thick remove it from the flame.
Arranging the Sticky rice with Mango:
In a platter arrange a ball of sticky rice. On the sides place the sliced mangoes. Top it with the coconut cream and garnish with the toasted black sesame seeds.
