Stuffed jacket potato with Poached eggs

 
Stuffed jacket potato with Poached eggs (Serves 4) Ingredients:
  • 2 Big and long potatoes
  • 4 eggs
  • 1 chopped onion
  • ½ cup chopped red bell pepper
  • ½ cup chopped yellow bell pepper
  • ½ cup chopped green bell pepper
  • 2 table spoons chopped garlic
  • 1 chopped tomatoes
  • 1 table spoon Paprika
  • 1 tea spoon black pepper
  • 1 tea spoon cumin powder
  • Fresh thyme
  • Salt to taste
  • 2 table spoons olive oil
Method:
  • Pre-heat the oven at 200 degrees Celsius. Cut the potatoes into 2 lengthwise. Sprinkle olive oil and salt. Bake it till the potatoes are cooked. Scoop the center of the potatoes and make a nice hollow space.
  • In a pan add olive oil, onions and garlic and sauté for a minute. Add paprika and all the bell peppers and sauté for 2 minutes. Add chopped tomato, salt, black pepper, cumin powder and thyme. Sauté for another 2 minutes.
  • To poach the eggs boil water in a vessel. Take a small bowl, keep cling foil in the center and break one egg and tie it with a thread or rubber band and put it in the boiling water for 2 minutes. Repeat the same procedure with all eggs.
  • Place the hollow potatoes in a platter. Fill them with bell pepper filling. Place the poached eggs on each. Sprinkle little salt and black pepper and a string of fresh thyme. Serve it hot with sriracha or mayonnaise.
