Lemon Tofu with Potato .
Ingredients & methods of Tofu with Lemon Zest

    1 Silken firm tofu (Paneer)
    200 gm of baby potatoes with skin
    100 gm of spinach
    100 gm of boiled peas
    salt
    2 tablespoon of olive oil
    2 tablespoon fresh parsley/oregano/thyme

    Wash the potato nicely as we are using it with the skin. Mix olive oil salt pepper and parsley to it. Bake it for 25-30 mins at 175 degrees Celsius. Dry the tofu with the help of tissue paper. Slice tofu into 2*2 inches approx. Mix all the ingredients of marination in a bowl. Keep 2tsp of marination aside. Place the tofu in a baking tray on a butter paper. Apply the marination made on the tofu. Preheat the oven at 175 degrees Celsius and bake tofu till it turns golden brown. In a baking tray arrange baked tofu, place baked potatoes on it. Sprinkle boiled peas on it and sprinkle spinach on the top. Sprinkle the 2tsp marination on it and bake it for 5minutes and serve hot.

    Ingredients for marination of tofu 

    1 tablespoon maple syrup (Honey)
    1 tablespoon mustard sauce
    1 ½ lemon juice
    1 lemon zest
    4 cloves garlic chopped
    2 dry red chilies sliced (chili flakes)
    pinch of salt
Why use butter paper for tofu? Its because tofu is very delicate and it’s easy to take tofu out from butter paper
