Tomato Basil Soup

 
Ingredients & methods of Tomato Basil Soup

    3 chopped tomatoes
    1 chopped onion
    1 table spoon chopped garlic
    1 table spoon grated ginger
    1 table spoon olive oil
    6-8 basil leaves + more to garnish
    salt to taste
    pinch of black pepper
    2 cups of water

    In a pan add olive oil, add chopped onions, garlic, grated ginger. Sauté for 5-7 minutes. Add salt, black pepper and water. Add fresh basil leaves. Cover it and cook for 5 minutes. Let it cool. Add this mixture in the blender and let it churn for a minute.

    Put this mixture in a pan and let it boil. Serve it hot and garnish with basil leaves.
