Vegetable Enchiladas

 
Vegetable Enchiladas (serves 4) Ingredients:
  • 2 corn tortillas
  • 1 tinned black beans
  • 1 Old El Paso enchiladas sauce
  • ½ cup chopped onions
  • 1 cup grated cheddar cheese
  • 2 table spoons chopped garlic
  • ½ cup chopped red bell pepper
  • ½ cup chopped yellow bell pepper
  • 2 table spoons chopped jalapeno
  • 1 tea spoon black pepper
  • 2 table spoons olive oil
  • salt to taste
Method:
  • In a pan add olive oil, chopped onions and garlic. Sauté it for a minute. Add the chopped red and yellow bell pepper and jalapeños. Sauté it for another minute. Add the black beans, black pepper, salt and let it cook for 5-8 minutes.
  • In a baking dish pour 8-10 table spoons of enchilada sauce. Spread well. 
  • Take a tortilla, apply 4-5 table spoons of enchilada sauce. Spread the filling on half of the tortilla. Spread the grated cheddar cheese on it. Fold it and cut it with a cutter. Place it on a baking dish. Pour enchilada sauce on it. Apply a layer of cheddar cheese. Bake it at 200 degrees Celsius till the cheese turns golden brown.
  • Garnish with basil leaves and serve hot.
