Vegetable Lasagna

 
Vegetable Lasagna ( Lasagne) (6 persons) Ingredients: · 10 Lasagna sheets · ½ cup finely chopped carrot · ½ cup finely chopped French beans · 4 baby corns cut into fine rounds · ¼ cup finely chopped red bell pepper · ¼ cup finely chopped yellow bell pepper · ¼ cup finely chopped onions · 6 cloves of finely chopped garlic · ½ cup homemade paneer (cottage cheese) · 2 tablespoons of olive oil · 1 ½ cups of tomato sauce (recipe below) · 2 cups of cheese sauce (recipe below) · few fresh oregano leaves/1 tablespoon of dry oregano · salt, pepper and chili flakes · 1 cup of grated cheese for topping Making of vegetables for lasagna: · Boil the lasagna sheet and put it in a cold water and keep it aside. Put olive oil in pan. Add garlic to it, sauté for a minute. Add French beans, carrot, onions and baby corn to it. Sauté it for another one minute on high flame. Add red and yellow pepper and sauté for another one minute. Add oregano, salt, pepper and chili flakes. Keep it aside. Grind the home-made paneer in the mixer and make a smooth paste Recipe of cheese sauce: Ingredients: · 2 tablespoons of olive oil · 1 tablespoon of butter · 3 tablespoons of maida (refined flour) · 5 finely chopped garlic cloves · 2 cups of milk · ¼ cup of fresh cream (optional) · 1 cup of grated cheese · salt, pepper, chili flakes · pinch of sugar(optional) · 5-6 fresh basil leaves/ 1 tablespoon dry basil leaves Method: · Heat oil and butter together in a pan. Add garlic sand sauté for a minute. Add maida to it, sauté for 1-2 minutes till its little pink brown. Add milk to it and keep stirring continuously. When it starts getting thick add grated cheese, salt, pepper, chili flakes, sugar and fresh cream to it. Add fresh torn basil leaves and keep it aside. Recipe of Tomato sauce: Ingredients: · 5 large tomatoes · 2 large tomatoes, peel the skin and chopped · 2 table spoons olive oil · 5 garlic cloves · 6 leaves of fresh basil/ 1 tablespoons of dry basil · salt, pepper and chili flakes Method: · Grind the 5 large tomatoes and garlic together and make puree. In a pan add olive oil, tomato puree and chopped tomatoes. Put fresh basil leaves and cover and cook for 15-20 minutes. We need to cover so that the aroma of tomato basil remains. Add salt, pepper and chili flakes and cook for another 1-2 minutes. Your sauce is ready. Assembling of Lasagna (Please see the video): · Pre-heat the oven. In a baking tray arrange the first layer of lasagna sheet. Apply the tomato sauce generously. Place the vegetables, top it with homemade paneer (cottage cheese) as shown in the video, top it with the cheese sauce, again repeat the procedure. On the top layer place lasagna sheet and cover it with the remaining cheese sauce. Cover it with grated cheese and bake it till the cheese turn golden brown.
