Vegetable Onigiri

 
            Vegetable Onigiri ( 8 balls): Ingredients: · 1 Cup sushi rice · 1 sheet nori (optional) · toasted sesame seeds · 2 spoon rice vinegar · salt For the filling: Peanut butter and roasted red bell pepper · 1 spoon of peanut butter · 1 red bell pepper (roasted in the oven for 10 mins) · 1 tablespoon of ginger · salt · pepper Method: · Roast the bell pepper in the oven. In a grinder mix the peanut butter, roasted bell pepper, ginger, salt and pepper. Make a smooth paste and keep it aside. Coriander and shallots with sesame seeds: · ½ cup of coriander · 4 shallots finely chopped · 2 spoons roasted sesame seeds Method: · Mix all the ingredients and keep it aside. Assembling: · Cook the sushi rice (best way to cook sushi rice is in the rice cooker) Divide the rice into two equal portions. Add 1 spoon of rice vinegar and salt to each of the rice portions. Mix both the fillings to the two bowls of rice. Gently mix it. Now make balls of the rice. Decorate one with the nori strips as shown in pic and another with the roasted sesame seeds. Serve with the Tamari sauce, soya sauce, chili mayo sauce Tamari Sauce: Ingredients: · 2 spoon grated garlic · 1 spoon ginger · 3 tablespoons Soya sauce · Rice vinegar (wine vinegar, plain vinegar) · 1 spoon of Mirin (white wine, balsamic vinegar) · salt, pepper, chili flakes · 2 spoons Sesame oil · 1 spoon of brown sugar(maple syrup) Method: · In a pan add sesame oil. Add grated garlic and ginger to the pan. Sauté for 1 minute. Add all the ingredients and sauté for another min. Your sauce is ready.
