Vegetable Rice Noodles (serves 4)
Ingredients & methods of Vegetable Rice Noodles

    200 gm rice flat noodle
    ½ cup sliced onions
    ½ cup sliced cabbage
    ¼ cup sliced carrots
    ¼ cup sliced Spinach
    ¼ cup sliced red bell pepper
    4 table spoons scallions
    2 table spoons red jalapeno
    1 table spoon grated ginger
    2 table spoons chopped garlic
    1 tea spoon black pepper
    2 table spoons soya sauce
    2 table spoons sesame oil
    ¼ cup vegetable stock
    5-7 Basil leaves
    salt to taste

    Boil the rice noodles as per the instruction on the packet.

    In a pan add sesame oil, onions, garlic, ginger and jalapeno and sauté for a minute. Add all the vegetables except scallions and sauté on a high flame for a minute.

    Add the salt, soya sauce, basil leaves, black pepper and vegetable stock. Add the boiled rice noodles and toss well.

    Garnish with scallions. Serve it hot.
