Vegetables Noodles with Yum Yum Sauce (4 servings)
Ingredients & methods of Vegetables Noodles with Yum Yum Sauce

    Ingredients for noodles

    · ½ packet Ching’s hakka noodles/soba noodles/rice noodles
    · 1 table spoon chopped garlic
    · 1 table spoon grated ginger
    · 4 table spoons chopped shallots
    · 4 table spoons scallions
    · ½ cup finely sliced carrots
    · ½ cup finely sliced red & yellow bell pepper
    · ½ cup sliced mushrooms
    · ¼ cup chopped broccoli
    · salt
    · freshly grounded black pepper
    · 2 table spoons of Sesame oil
    · ½ cup noodle water

    · Boil the noodles as per the instruction on the packet. In a pan add one table spoon of sesame oil. Add chopped mushrooms and broccoli and sauté well till cooked. Keep it aside. In the same pan put 1 table spoon of sesame oil, add chopped garlic and shallots and sauté for a minute, add grated ginger sauté again. Add the sliced vegetables and sauté for a minute. Now add the noodle water and cooked noodles, salt & pepper. Toss well.
    Ingredients for YumYum Sauce
    · 1 Cup Greek yoghurt
    · 2 table spoon melted butter
    · 2 table spoon chopped garlic
    · 1 table spoon grated ginger
    · 1 table spoon chili paste
    · 1 table spoon paprika
    · 2 table spoon water
    · 2 table spoons mirin
    · 1 tea spoon lemon zest
    · 3-4 table spoons water
    · salt
    · In a blender churn all the ingredients. Yum Yum sauce is ready.

    Arranging the dish: Place the cooked noodles. Top it with Yum Yum sauce and garnish with scallions and roasted peanuts.
