Vegetables rice shepherd’s pie

 
Vegetables rice shepherd’s pie (serves 6) Ingredients for Vegetables rice
  • 1 ½ cups vegetable stock
  • ½ cup long grain basmati rice
  • 1 cup sliced mushrooms
  • ½ cup finely chopped carrot
  • ½ cup green peas
  • 5 table spoons tomato puree
  • ½ cup chopped onions
  • 2 table spoons chopped garlic
  • 1 tea spoon thyme
  • 1 tea spoon black pepper
  • 1 table spoon paprika
  • 2 table spoons olive oil
  • salt to taste
Method:
  • In a pan add olive oil, onions and garlic and sauté for a minute. Add sliced mushrooms, chopped carrots, peas and paprika and sauté for 30 seconds. Now add rice, tomato puree, salt, black pepper, thyme and vegetable stock, stir well , cover it and cook on a slow fire .
Ingredients for Potato crust
  • 4-5 medium size boiled potatoes
  • ½ cup grated cheddar cheese
  • 4 table spoons curd
  • 3 table spoons butter
  • 6 table spoons vegetable stock
  • 1 tea spoon black pepper
  • thyme
  • salt to taste
Method
  • In a pan add butter and boiled potatoes. Add vegetable stock and let it come to boil. Add curd, salt, black pepper and thyme. With the help of masher mash the potatoes. Once the water evaporates add cheddar cheese and mix well.
Assembling the dish 
  • Pre-heat the oven at 200 degrees Celsius. In an iron bowl or a baking tray arrange the cooked vegetable rice. Make a layer of mashed potatoes and bake till the potato crust gets brown. Serve hot.
