White Chocolate Blueberry Cups (makes 6 cups)
Ingredients & methods of White Chocolate Blueberry Cups

    1 cup mascarpone cheese
    1 cup whipped cream
    1 cup white chocolate
    3 table spoons icing sugar
    1 cup fresh blueberry
    4 table spoons sugar
    1 tea spoon lemon zest
    5 table spoons water

    In a double boiler melt the white chocolate.  In a standing mixer or with a hand mixer whip mascarpone cheese and icing sugar together till smooth. Keep this aside. Whip the whipped cream till the peaks are formed (as shown in the video). Now add the whipped mascarpone cheese and melted white chocolate and mix it well for 30 seconds. Fill this mixture in a piping bag.
    In a pan add blueberry, sugar water and lemon zest. Cook till the blueberries are cooked well and the water has evaporated.

    Assembling:

    In an individual bowl or glasses pour the white chocolate mixture with the piping bag. Top it with cooked blueberry sauce. Refrigerate for 5 hours and serve.
